For the DE2 kernel config question,

you should start with the default from uClinux-dist with latest nios2 patches.

After you have successful boot of uClinux, you can add others step by step,

eg, DM9000 for ether net. You should enable only what you need, or the kernel will get bigger.

The DE2 has only 8MB memory.
