I'm building a server for video encoding and I'm planning to use the latest Xenon e5-2697 v2.

Can Xeon Phi help me improve ffmpeg encoding performance?

Xenoxy, the Intel Xeon Phi Coprocessor is a product designed to work on HPC environments. The only way it will improve encoding performance is if the computer that does the encoding is setup in an HPC (cluster) environment that includes the Phi co-processor as one of the nodes.
